If the countdown to Cinco de Mayo has you craving a margarita this weekend, we recommend mixing things up a bit with Meyer lemons! Meyer lemons are believed to be a cross between a lemon and a Mandarin orange; they are smoother, rounder, and a little sweeter than a regular lemon. Inspired by this recipe, we made our Meyer lemon margaritas a little less tart by adding simple syrup.

Ingredients

(Makes two drinks)
For the simple syrup
1/2 cup sugar
1/2 cup water
For the margaritas
3 ounces freshly-squeezed Meyer lemon juice
3 ounces tequila
2 ounces triple sec
2-4 tbsp. simple syrup
Salt for rimming the glass

Instructions

1. Make the simple syrup by bringing the sugar and water to a boil in a small sauce pan. Stir until sugar is dissolved, then set aside to cool.
2. Wet the rims of two glasses with water or lime juice and dip in salt. Add ice to glasses.
3. Combine the Meyer lemon juice, simple syrup, tequila, and triple sec with ice in a cocktail shaker and shake for 15-20 seconds.
Strain into glasses and serve. Cheers!
